
Now, onto our fabulous dinner last Friday. We decided to surprise Grandad at Costco (he is a wine consultant) and saw an incredible seafood display was tantalizing him across the aisle. I asked him if he'd been imagining all the fun things he could make all day, and he led me to some very pretty wild-caught snapper. So we selected the biggest two we could find (cost:$22), and I knew we had to do the salt-crusted recipe. You can find this recipe online, but I really don't think it's necessary.
Aromatic herbs, lemons, 5 egg whites, a 1/2 cup of water, a box and a half of Mortons salt, fish and parchment paper.
Mix the salt, egg whites and water until it is all a moist paste. This is great fun for children! Ev helped me.
Clean and pat dry fish. Make a bed of salt on parchment paper. Lay fish on it. Stuff herbs and lemons in cavity. Pile the rest of the salt over the fish and pat into a complete mound. It is okay if tail and head stick out. Place in preheated oven for about 30 minutes, depending on the size of your fish.
Crack open the salt dome with a meat tenderizer.
Filet and sprinkle with salt, lemon juice and olive oil.




No left overs!

Looks like everyone had fun! Graham looks very excited to have the mallet job, and I love the pic of Paige helping her little sister.
Yum! That does look like yummy fun. Colin and I love fish; the others, not so much.
It was so good that we had that fish again this week. We did it on the grill using a wood plank we bought at Costco. It was delicious too.
